In France and Spain, they’ve always been a popular delicacy, and in the 19th century, no Viennese market was complete without them. Little by little—or rather, crawl by crawl—the snail is finding its way back onto plates and may soon be making a comeback as a superfood. At the Vienna snail farm Gugumuck, everything revolves around the sustainable farming of over 200,000 vineyard snails.
Farmer Andreas Gugumuck has transformed his parents’ farm in the south of the city into a paradise for foodies. On-site, you’ll learn everything about the resource-efficient farming of this delicacy during fascinating guided tours. You can also enjoy extraordinary dishes at the on-site bistro.
The green breeding paradise in the south of the city

On the expansive open grounds, the snails thrive under ideal conditions among fresh herbs, grass, and a gentle mist. On the popular farm tours, you’ll take a leisurely stroll through the fields, get a firsthand look at the operation, and learn why snails provide four times more protein than beef. They are therefore rightly considered an extremely sustainable and eco-friendly food source. Snails don’t need much space, are easy to raise, and require little food.
