Just in time for the cold season, three Vienna locations of the well-known ice cream maker Eis-Greissler in Vienna and other cities won’t be closing this year—instead, they’ll open on Saturday, October 24, as pop-up stores serving warm “Krumble.” In total, the operators are temporarily switching seven locations across Austria to hot desserts. What’s the story behind this? We have the answer!
From the School Milk Slump to Warm Desserts in Cups

The story behind the brand dates back to the year 2000. It all began with a farm in Krumbach and about 50 cows that produced milk for schools and kindergartens. In the summer, when these institutions were closed, milk sales plummeted. That’s why a second source of income was needed. What could be more natural than producing ice cream using their own high-quality milk? No sooner said than done! The first ice cream shop opened in 2011 on Rotenturmstraße. Exactly 15 years later, the next business move is now underway. Instead of letting the shops lie dormant for months during the winter, the team is banking on a modern, trendy dessert from Great Britain for the cold months.
The dish originated in Great Britain during wartime, when butter and flour were in short supply and fruit had to be baked in the oven with crumble topping. This comfort food recently experienced a viral trend wave from New York and London, which is now being brought to Austria using regional ingredients. For the new project, the operators created up to 30 new jobs in a short period of time.
The dessert is served in layers: For the warm fruit base, you can choose between apple, roasted plums, apricot, and wild berries. Topped with either light or dark crumble, warm vanilla sauce made from the farm’s own cow’s milk, and garnishes such as flambéed meringue and crème brûlée.
